We are a trading company seeking reliable suppliers of milling-grade bread wheat, suitable for use in bread flour production. The wheat should be soft to medium-hard in texture and meet the following quality standards:
The wheat must have a minimum test weight of 76 kg/hl, with moisture content not exceeding 13.5%. We prefer wheat with a protein content of at least 11.5%, though 12% or higher is ideal. The wet gluten content should be no less than 26%, and the falling number must be 250 seconds or more, indicating sound wheat with minimal sprouting.
Additional quality parameters include an ash content of no more than 0.65%, foreign matter not exceeding 1%, and a maximum of 3% broken kernels. The wheat should contain no more than 4% shriveled or immature kernels and no more than 1% insect-damaged kernels. Dockage (unwanted materials) should be limited to 2%.
The wheat must be free from ergot, and aflatoxin levels should be undetectable or less than 5 parts per billion, in line with WHO/FAO standards. We require that the product be stored and delivered in clean, dry, and well-ventilated conditions, free from infestation.
