Design features of the intermediate proofers:
- All elements in contact with the dough piece must be made of stainless steel or materials approved for use in the food industry;
- The body of the preliminary proofing cabinet must be made of stainless steel;
- Pockets for dough pieces must be made of polyamide mesh;
- The cabinet control should be based on an industrial controller for operation in three modes:
A) Synchronous mode: Unloading of dough pieces from the cabinet is synchronized with loading, the cabinet capacity is determined by the capacity of the divider and should be able to accept up to 40 pieces of dough pieces per minute.
B) Automatic unloading mode: No loading, unloading of dough pieces occurs at the capacity set on the cabinet control panel.
C) Manual unloading control mode: No loading, unloading of dough pieces occurs when the corresponding button on the control panel is pressed and held, the chain conveyor and the conveyor move continuously.
It is necessary to provide for the possibility of:
- Movement of the dispenser for feeding dough pieces into the proofing cabinet trays both "from left to right" and "from right to left".
- The presence of air treatment inside the cabinet with an ultraviolet bactericidal lamp.
- Removal of excess moisture from the interior of the cabinet using an exhaust fan.
- Equipping the dough blanks distributor with a flour sprinkler.
